Avocado & Caviar Eggs

If you are like so many, breakfast can sometimes be an afterthought. Its so important to get a mix of healthy fats, protein and carbs.

Did you know? One of the reasons I recommend this go to breakfast is because Sturgeon caviar is rich in omega-3 fatty acids and is a true super food.

Why Avocado?

Avocados are a great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They also provide lutein, beta-carotene, and omega-3 fatty acids.  Did you know that an Avocado has more potassium than a banana?


Why Caviar?

Caviar is a nutritionally dense food that was once used as a treatment for depression. Caviar is filled with selenium,  calcium, phosphorus, protein, , iron, magnesium, and Vitamins A, C, D, B6, B12 and B2. It also contains essential amino acids such as lysine, isoleucine and methionine as well as argine and histidine. According to nutritional data, just one tablespoon of this luxury food contains as much as a gram of Omega-3 fatty acids that is beneficial in maintaining heart health.


Why Egg?

Eggs are a very good source of inexpensive, high-quality protein. More than half the protein of an egg is found in the egg white, which also includes vitamin B2 and lower amounts of fat than the yolk. Eggs are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper.



To Make This Breakfast:


Ingredients:

  • Caviar

  • Chives

  • Red Pepper Flakes

  • Salt

  • Pepper

  • 2 Eggs

  • 1 Ripe Avocado


Instructions:

  • Cook Soft Boil 2 eggs (Directions below)

  • Cut Avocado in half and peel skin off

  • Season avocado with salt, pepper and red pepper flakes (to taste)

  • Place soft boiled egg inside cut avocado, cut open, top with chives and caviar

  • TaDa - a perfect breakfast!



How to make a soft boiled egg

INGREDIENTS

  • 1 large egg, chilled

INSTRUCTIONS

  1. Add 1 inch of water to a sauce pot, cover, and bring to a boil over high heat.

  2. Once boiling, add an egg (or however many you'd like as long as they are in a single layer in the bottom of the pot), straight from the refrigerator into the pot. Replace the lid and let it continue to boil for exactly six minutes.

  3. After six minutes, remove the egg(s) from the pot and place them in an ice water bath or run under cool water until they are cool enough to handle. Peel, and enjoy!

NOTES

If you do not plan to eat the egg immediately, cool the eggs completely in an ice water bath to stop the cooking process. Otherwise, the eggs can be peeled and eaten warm as soon as they are cool enough to handle.
